Tarago River Shadows of Blue (2kg)
Situated in Victoria’s Gippsland region, Tarago River Cheese is a joint venture between two local farming families, the Jensens and the Johnsons. Together they are pioneers of Australian artisan cheese making, creating Australia’s first commercially available blue and white mould cheeses in 1982.
Shadows of Blue is a contemporary double cream blue that ripens in 8 weeks. Like with all blue cheeses, there is a cheese spiking process a week or so after the original making to include some air or oxygen for the mould cultures to develop.
A natural wax coating slows the growth of surface ripening cultures and sweetens the cheese. When ripe, this buttery, mild blue can be spread easily.
