Paddock to Plate Free Range Pork Rillette (150g)
Essentially, there are two types of pork rillettes, those of Tours and those of Le Mans.
The traditional Tours is exclusively from pork meat, it relies on an accurate seasoning including garlic, shallots, thyme, bay leaves, sea salt, black pepper and dried spices. The meat is slowly cooked until it falls apart, then shredded, blended with melted pork and duck fat, and left to set.
We recommend serving rillette at room temperature to allow the flavours to come through. Serve with artisan breads on a charcuterie board or as an entrée with a simple green salad and cornichons. For something different, fold through a warm Mediterranean salad or in a scrumptious toasted sandwich made with crusty ciabatta.
