Mr Cannubi Mortadella with Pepper (3kg)
A staple in the northern Italian city of Bologna is this large forced meat salumi that is studded with diced back fat. Mr Cannubi’s mortadella is made from only Western Plains pork where method and technique achieve a product that has beautiful diamonds of back fat suspended in every slice. A spice mix of coriander seed, garlic and white pepper is carefully balanced with the right amount of whole black peppercorns flecked throughout.
This is a hand made product that would be a welcome addition to any Salumi or Charcuterie board or sliced thinly and draped over warm bruschetta to allow the fat to soften. It’s also delicious cut thick and served with a great pickle.
