Julian Martin Jamon Iberico De Bellota Puro (approx 4kg)
This extraordinary Spanish ham (jamon) comes from a pure blood line of 100% Iberico pigs. This rare breed of black Spanish pig has dark hooves, and is often referred to as pata negra. This breed of pig is revered because of its ability to store fat so that it is marbled into the meat.
The pigs are exclusively fed on acorns in a free range environment giving the ham an exquisite, nutty, and complex flavour.
The curing period is 30 months or longer, depending on the size of the leg.
