Frozen Australian Truffle Pieces (‘Tuber Melanosporum Vitt.’). Blast-freezing consists of a very fast freezing process in which products undergo temperatures down to -30°C. This technique allows the full preservation of the physical structure of the truffle for long periods of time. The blast-frozen truffles retain the full sensory and organoleptic characteristics and avoid the growth of microorganisms.
