Golden/Snow Soy (360ml)
Often referred to as golden soy, this liquid has been fermented for 4 years. On the palate, it isn’t too pleasant.
It’s essentially like a liquid Koji. It’s five times saltier than soy, incredible on meat and often used as a tenderiser.
It’s also suitable on fish or even used on salad.
Salt ordinarily would wilt or extract water from vegetables, brush this liquid on vegetables and it will preserve it for about 3 days in its original state. It’s perfect for ageing. Try brushing it on a protein and watch it take on this depth and develop a rich umami taste. Let it sit for a minimum of 6 hrs.
