La Hoguera Duroc Paleta – shoulder (approx 3kg)
The paleta (shoulder) is acquired from the forward leg of the pig. It develops a slightly more intense, distinct flavour due to the close contact with the shoulder bone during maturation. The paleta is also lazier than the hind legs, which gives it a stronger, saltier fat build up around the meat.
Smaller than the leg, this rounded piece is available in a 2.5 – 3kg (approx.).
