The quintessential English cheese, Stilton can only be produced in Nottinghamshire, Derbyshire and Leicestershire. With only five PDO certified Stilton producers remaining, Colston Bassett Dairy, founded in 1913, is one of the pre-eminent producers of Stilton.
Remarkably, Colston Bassett has had only 4 individual cheesemakers over the last 100 years. Still operating as farming cooperative, the farmers have a profound and personal commitment to ensuring that only the highest quality milk is produced for cheese making.
Colston Bassett still use traditional methods of production, including the labor intensive process of hand-ladling the curds, and hand- turning the cheeses. Texturally Stilton is crumbly, yet creamy with perfectly balanced sweetness and acidity.
